This strawberry cake….If you have followed me for awhile you probably get that I am a Finnish foodie. I grew up eating some of these amazing traditional Finnish foods and I love them!! This strawberry cake, täytekakke is a Finnish filled cake. Filled with strawberries and whipped cream…sooo good.

This recipe for Finnish filled cake aka täytekakku. täyte (“filling”) + kakku (“cake”) pronounced t-ow-te-kak-uu came from my Mom. She has made this so many times….love it….you will too.

This cake will wow the crowd at your summer potlucks and gatherings.

Can i use other fruit?

Yes, you can. You can use whatever fruit you like. I love to add blueberries to the filling.

Directions

Start by preheating your oven to 350 degrees.

Sugar being added to sliced strawberries

Wash your strawberries or berries of choice. Slice the strawberries into a bowl and add 2 tsp of sugar. Mix and set aside. If you have decided to use frozen ones let them thaw.

Add your room temperature eggs and sugar to the mixing bowl. Turn your mixer on. Beat the eggs and sugar until foamy and you can form a stiff peak.

Carefully add in the flour. FOLD IT IN THE EGG MIXTURE WITH A SPOON OR SPATULA.

can this be made gluten free?

Yes, this recipe can be made gluten free. I like to use this brand of gluten free flour. Just replace the all purpose flour with a gluten free all purpose flour option.

Pour into your prepared pan.

Bake for 30 minutes. Do not open the oven door or jar the stove while cooking. Your cake may fall.

Place you cake on a cooling rack and let cool.

Using a butter knife, run the knife around the edges of pan. Turn the cake onto the cooling rack.

Cutting a cake into layers

Once the cake is cooled. Take a large serrated knife and carefully slice of the top third of the cake. Then cut the remaining cake in half.

You should have 3 even layers.

Add your heavy whipping cream to a cooled mixer bowl. Beat on high until stiff. Add sugar and mix.

Place your bottom layer on a cake stand. Spread half of your cut strawberries onto the cake. Remember to use some of the juices from the berries. Top with a layer of whipped cream. Repeat for the next layer.

can i use frozen or fresh fruit

Yes, you can use either. The frozen fruit will need to be thawed out first.

Crumb coating on a cake

Spread the whipped cream in a thin layer on the cake. This is your crumb coating. Top off the cake with whipped cream. You can add sliced strawberries on top.

Equipment

  • Mixer
  • 9" round cake pan
  • parchment paper
  • rubber spatula

Ingredients
  

  • 1 cup granulated sugar
  • 4 whole eggs room temperature
  • 1 cup all purpose flour

Instructions
 

  • Preheat oven to 350 degrees.
    Cut parchment paper to fit the bottom of a 9" round pan. Grease the sides of pan.
    Add the sugar and the eggs into a mixing bowl. Beat on high speed until the mixture is foamy. Carefully add the cup of flour and fold in with a wooden spoon or spatula.
    Bake for 30 minutes. Cool on cooling rack

Whipping Cream

  • 2 cups heavy whipping cream. Chill your mixing bowl. Add the cream. Beat on high until you can form a stiff peak by dipping the beater in the cream and pulling up.
    Add the sugar and mix.

Strawberries

  • Wash and slice 2 cups of fresh strawberries. (If using frozen, let the berries thaw) Add the sugar and set aside until the cake is ready to put together.

Putting the cake together

  • Using a serrated knife, carefully cut off a third of the cake horizontally. Cut the remaining cake in half the same way.
    Place the bottom of your cake on a cake stand. Add half of the berries and spread out. Use some of the juices also. Top with a layer of whipped cream.
    Repeat for the next layer.
    Add the top of the cake and frost with a thin layer of whipped topping. This is your crumb coat.
    Finish off the cake to your liking. Top with strawberries or other fruit. Chill in the refrigerator for an hour. Serves 8-10.

I like to put this cake on a cake stand. Here is a similar one to the one I have. I also like to use this stand for serving cookies and bars. It adds nice height to your serving table.
