This one of the easy healthy dinner ideas has just 6 simple ingredients. It is super easy to throw together in a pan and voila…supper in a flash. Using red potatoes or yellow potatoes makes this dish even faster to get into the oven. No need for peeling them, just wash and chop.

Ingredient list

4-6 medium red or yellow potatoes

1 package all beef hot dogs

1 can of cut green beans

2 tablespoons olive oil

1 tsp salt

1/4 tsp black pepper

Directions

Preheat oven to 400 degrees. Wash and dry the potatoes. Cut the potatoes up into approx 1″ pieces and put them into the pan. Remove hot dogs from the package and cut these into approx 1/2″ pieces and put them into the pan. Open the can of green beans, drain and pour the beans into the pan. Measure the olive oil, salt and pepper. Add to the potatoes mixture and toss to coat. Cook for 45 minutes or until potatoes are soft. Serve with a side of ketchup.

Can you use different vegetables?

Yes! you can use whatever vegetable you want! Sometimes I add carrots and onions.

Can you substitute olive oil for butter?

You can substitute olive oil for butter. However this tends to make it stick to the pan, so I would recommend you stir halfway through cooking.

Can I use russet potatoes?

You can use russet potatoes but this is a meal I make when I do not have a lot of time, so using red or yellow eliminates the need for peeling.

  • 4-6 red or yellow potatoes
  • 1 pkg all beef hot dogs
  • 2 tbsp olive oil
  • 1 tsp salt
  • 1/4 tsp black pepper
  • 1 can cut green beans
  1. Wash and dry potatoes. Dice potatoes into 1" pieces. Cut hot dogs into approx 1/2" pieces. Put into pan. Open the can of green beans. Drain and add to pan. Measure olive oil, salt and pepper. Add to ingredients in pan. Toss to coat.

    Bake in a 400 degree oven for 45 minutes or until potatoes are soft.
